Citrus season is in full swing here, and I am enjoying bergamots in everything I can.
Bergamots are a sharp yet floral flavoured citrus, that have the size and shape of an orange but with colourings closer to a lemon.
Bergamots aren’t a common citrus found at the shops, their uses seem to be more popular in essential oils and the like, than in cooking.
The flavour of bergamot really comes into its own in baking however, so if you ever come across some, please get them and bake something!
This easy loaf cake is a great example of what to bake with a bergamot. You will use both the zest and juice in the cake, for a full hit of bergamot flavour. It’s also a lovely simple and comforting recipe, which won’t take you too long to make.
This cake recipe uses a little of the bergamot juice to sour regular dairy milk which helps, along with the bicarb soda in the cake, to give the cake a wonderfully soft crumb and texture.
You can of course use other citrus in place of bergamot, and if you have any buttermilk you can use that rather than souring regular milk as well.
