An Apple & Strawberry Crumble
An Easy Dessert for Weeknights and All Other Nights - Friday Food Chat with Kath
This is my favourite dessert to make.
It’s simple, quick and very tasty. It’s a great one to use up odds and ends of fruit, and if you happen to have vanilla ice cream to serve with it, all the better.
Apple and strawberry is my favourite and most utilised flavour combination for this crumble, however pears also work well, and so do all other kinds of berries (fresh or frozen).
Apple and Strawberry Crumble
Ingredients:
40g unsalted butter, softened
55g rolled oats
55g plain flour
55g brown sugar (or panela, or caster sugar)
1/2 tsp ground cinnamon
X2 medium apples* (x3 if smaller in size)
250g strawberries
1 tsp vanilla extract
Method:
Preheat oven 170 degrees Celsius.
In a medium bowl mix together the butter, oats, flour, sugar and cinnamon. Mix until everything is combined, you can rub the butter in with your fingers if mixing with a spoon isn’t quite doing the job.
Finely slice the apples (no need to peel them!) and place them in a 1.25L/5 cup capacity baking dish - I like using a baking dish that is wide and shallow for this recipe (like the one in the photo above).
Slice or roughly chop the strawberries, add to the baking dish and pour over the vanilla. Toss everything together, then evenly top with the crumble mixture.
Bake for 25-30 minutes or until the crumble topping is golden brown.
Serve straight from the oven, preferably with a scoop of vanilla ice cream per serve.
Serves 4 (generously), leftovers can be kept covered in the fridge once cooled.
*I always use Pink Lady apples for this recipe, but that’s mostly because that almost the only apple variety I ever buy! You can use whatever you like, something you’d usually like to eat is a good choice.
