Christmas Biscuit or Cookie boxes seem to be all the rage at this time of year.
I bought one last weekend at a local bakery (pictured below), which was really nice as they had a really interesting selection of biscuits most of which I’ve never made before.
I’m not sure I have the ability to make a cookie box myself this year (especially with such a range of biscuits!), but biscuits or cookies are always a staple in my festive baking repertoire.
Below are some biscuits that would make great additions to a Christmas cookie box, or to fill your biscuit jar this festive season.
Gingerbread - there are many types of gingerbread across the world but this is the recipe I make every year. You can freeze the dough, and allow it to defrost in the fridge overnight if you would like to partially prepare your Christmas cookie baking in advance.
Shortbread - not the most Summer friendly bake, but a festive one nonetheless, that even very hot days won’t stop me making at least once around Christmas. This is the recipe my Grandma always made, and here is a nice pistachio and vanilla alternative that is also very delicious.
Biscotti + Amaretti - Confession. I’ve never made amaretti or biscotti before! However this Almond Biscotti recipe from Silvia of Villagio is on my to bake list, along with these Pistachio Amaretti from The Boy Who Bakes.
Something Chocolate - Most people like chocolate (except me!), so a biscuit featuring something chocolatey is often a good option. These Burnt Butter Choc Chip Cookies are a nice twist on a classic, and these Chocolate Christmas Pudding Cookies look festive with minimal decoration experience necessary.
Something Else - I don’t know what to call this category, so going with something very vague! Here are some other biscuits that would be awesome in a cookie box! These Cardamom and Rosewater Macaroons (GF + DF, plus they are a great way to use up leftover egg whites!), Crystallised Ginger and Almond Biscuits (very few ingredients, very easy to make!), and these Crunchy Cinnamon Biscuits (which you could definitely change to a festive spice mix over the cinnamon if you wished).

Lots of great suggestions Kath. I must admit to becoming something of a convert to the whole Christmas biscuit box. It’s a nice project and people love them as gifts.
