The beginning of this year seems to have simultaneously gone fast and slow.
The intense humidity of January and February felt like it lasted forever, then I blinked and March was over and suddenly we are in April with Easter fast approaching.
I am feeling rather unprepared in terms of my Easter baking, but below is a selection of things I am hoping to bake in the next couple of weeks or so to remedy my Easter baking situation.
What are your favourite Easter recipes? Or do you prefer to buy hot cross buns and call it a day?
Of course we must start with Hot Cross Buns. This is my preferred recipe, and here is an option to turn your Hot Cross Buns into a loaf.
Chocolate seems like a must for Easter - here are some cute Chocolate Cupcakes for a nice easy bake, or a decadent Chocolate Layer Cake for something a little more grown up.
I also love carrot cake at Easter, it’s a great alternative if you (like me) aren’t a fan of chocolate. Here is a Carrot Cake with Biscoff Buttercream (pictured above), plus some Carrot Cupcakes that can be decorated with Easter themed sprinkles if you are so inclined.
I’d also like to make this Hazelnut Cake with Coffee Caramel Buttercream (minus the coffee, as along with chocolate, coffee is not my friend) again. I created this recipe for The Healthy Baker a few years ago, and I really enjoyed it at the time, I think it’s time to revisit the recipe.
If you feel like playing with chocolate for Easter, here is a recipe to make your own Rose Rocky Road Easter Eggs (pictured below). You will need some large Easter egg moulds, but if you like me can never find Easter treats that really ‘speak’ to you, making your own can be highly satisfying!
