Simple Easy Cakes Ready for Snacking or the Freezer - Friday Food Chat with Kath
I love a good loaf cake. I know they are really just a shape of cake, rather than a category of baked good, but something about them is just so practical.
Loaf cake recipes are often quite forgiving with regards to tin size, as long as it’s not too small you should be ok as long as you keep an eye on it as it bakes (you may find the baking time differs slightly if you have a different sized tin).
Without icing, loaf cakes can be sliced up and frozen to enjoy another time. There’s something very comforting about knowing there is cake ready and waiting I think.
Below are my favourite loaf cake recipes:
Apple and Honey Loaf - I make this one a lot! It’s a great way to use up any apples that are a bit past their best or if you have a glut of them. The cake freezes really well too (cake pictured below).
Bergamot/Lemon Loaf - This is a simple yoghurt based loaf cake, that you can put any citrus you like in. My favourites are bergamot or lemon, but orange would also be nice. If you want to freeze this one don’t ice it, but if you are after a nice sweet treat, a simple glaze icing made from citrus juice and icing sugar is perfect for this loaf cake.
Rose Loaf Cake - I love this cake, as it’s simple and delicious. I love the flavour of rose, so I always make the icing as well and sprinkle with edible dried rose petals. The decoration also means it looks a bit fancy and celebratory with very little effort.
Banana Loaf - Banana breads or loaves are top tier loaf cakes in my opinion. They are easy to make, sturdy and filling, plus they freeze well. Pistachio Loaf - maybe the most decadent loaf cake in this list (pictured above), this is one for the pistachio lovers! I have to say I never freeze this one, as I really enjoy it with the icing and never seem to have any leftovers anyway! You can also use lemon juice in the icing rather than rose if you’d prefer.
