If you like to bake, edible gifts are always a great option for the festive season.
You get to do something you love, and others get to enjoy it!
I have found these mini Gingerbread biscuits the perfect thing to bake and gift for Christmas. I collect jars during the year to reuse to gift them in, fill them with these mini biscuits, tie a ribbon around the top, and send them on their way!
This is a fairly simple recipe, you may just need to co-ordinate the baking depending on the the number of biscuits you end up making (which will depend on the size of your biscuit cutters), and how many trays and oven racks you have.
The dough can easily be frozen so you can do this recipe in stages if you need. Or bake double have some ready for another time!
