Pistachio seems to be all the rage right now, I’m glad so many have finally caught up to my levels of pistachio obsession!
Filling biscuits or cookies with some kind of pistachio spread seems to be very popular right now. I’ve seen a few recipes online, and noticed a few bakeries making cookies filled with popular pistachio spreads.
Crema di pistacchio, or pistachio cream/spread, is quite an expensive ingredient and finding really good quality ones with high pistachio content can be challenging here in Australia.
So I decided to use my trusty pistachio butter recipe to fill some pistachio caramelised white chocolate biscuits with - and I can confirm they are very tasty, and didn’t cause me any financial stress over using a whole $20 jar of crema di pistacchio for one recipe!
