Ok it seems Spring is really here in Sydney now (RIP Winter I miss you already!), so here are some Spring-ish bakes to liven up your weekend.
This Blood Orange Chiffon Cake is a very nice way to showcase the last of the blood oranges (and use up any eggs you may have as well). Chiffon cake is a bit of effort, but the light as air sponge is always worth the time it takes to make it.
Rhubarb seems to be an all rounder here in Australia, it seems to flourish regardless of the time of year. This Rhubarb and Pistachio Cake (pictured above) is my favourite way to incorporate rhubarb into a bake - no fuss but delicious.
These Vanilla Sprinkle Melting Moments could probably fit into any time of year, but something about the bright sprinkles has me feeling they fit the Spring theme very well.
These easy Oatmeal Biscuits I shared with my paid subscribers last weekend are also a nice easy thing to bake on a lovely Spring weekend. I guarantee they will be eaten in a flash they are so more-ish.
This Ultimate Vanilla Cake I created for Grounded Pleasures a few years ago has a very Spring-ish vibe (pictured below). Now is the time to re-create it with so many edible flowers coming into season now.

Honey Jumbles
A classic Australian biscuit, made a little bit jumbo size because more of a good thing is always better. If you don’t have any pomegranate juice for the icing, just use lemon juice or water and some pink food colouring.

My best friend and her husband and son went to Australia 🇦🇺 for over a month at Christmas time many years ago (before Google, before social media, before any home computers really). After calling her all the names 🤬 under the sun for leaving me on my own at Christmas 😭, I have forgiven her many many times over for bringing back the recipe for ….Lamingtons and Anzac biccys. I get a new batch of the delicious ones regularly ☺️.
