With Homemade Strawberry Marshmallows! - Friday Food Chat with Kath
This recipe is one for the sweet tooth’s (like me!).
I love white chocolate rocky road, and homemade marshmallows will always be the best marshmallows you’ve ever eaten. Add in some fresh strawberries, combine with some white chocolate, and you’ve got strawberries and cream rocky road!
Ok, it might be a little more complex than that - you do need a candy thermometer and stand mixer to make the marshmallows - but I promise you homemade marshmallows are worth the effort.
If you were thinking of making some edible gifts or have an event or gathering that means you can serve a lot of people, homemade marshmallows and this strawberries and cream rocky road are excellent things to make.
When I made this, I timed it so it was a week I would be going into the office and celebrating my manager who was leaving (so commiserating really, please don’t leave us Emma…). Which meant I had lots of people to share all this homemade confectionary with - and some new people to convince that homemade marshmallows are better than store bought and are worth trying even if you usually hate marshmallows!
You can find the recipe over on my blog here - you will end up with more marshmallows than you need for the rocky road, however they last at least three weeks (as they are egg free) and are extremely delicious on their own!

Crema di Pistacchio Cake
The rest of the internet seems to have caught up with those of us who are pistachio obsessed lately! Crema di Pistacchio, or pistachio cream, is a sweet Italian pistachio spread similar to choc hazelnut spreads we are all familiar with. This cake is a decadent way of using the spread, that is well worth it however you can use the alternate cake recipe listed in the blog post and just make the icing if don’t want to use all of your crema di pistacchio supply in one cake (I get it, jars can be around $20 each!).
