I don’t know about you, but I am in need of all the warming bakes and recipes right now.
I’ve said it many times before, but this cooler part of the year is my favourite time to bake. It’s not too hot to have the oven on, and there are more cups of tea and hot chocolate being had to enjoy something sweet with.
It’s also a great time for warming and comforting dinners, so I’ve complied a list of the cosiest recipes for your cold weekend kitchen time.
Tomato and Bacon Soup - this recipe is a very minor adaptation of a well loved Australian Women’s Weekly recipe, which my family has enjoyed for years. It’s often high rotation here at this time of the year, I highly recommend you try it.
Prosciutto and Sun Dried Tomato Risotto - I LOVE a good risotto, and in my experience home made ones are generally the best. This is my favourite combination of prosciutto, herbs, cheese and sun dried tomato, but you can use the base of this recipe to make pretty much whatever kind of risotto you want. If you have any Parmesan rinds in your freezer, add one or two to the risotto when you add the stock for extra flavours and remove them before serving.
Homemade Stock - I regularly make homemade chicken or vegetable stock at home in our slow cooker, we rarely buy stock anymore and our dinners are all the better for it. This is the recipe I use, but you can adapt and change to suit what you have and what you prefer. I tend to make a LowFODMAP version of this now, with little to no onion, but spring/green onions (scallions) instead. It’s a great way to use up odds and ends of vegetables and herbs, give chicken carcasses a second life and better cater to food intolerances.
Crumbles - Crumbles have fast replaced sticky date pudding as my favourite winter dessert, as they are easy to make and are really delicious. This is my favourite easy crumble recipe, using apples and strawberries. You can adapt to suit what you have/like, and here is a peach and raspberry version for those currently in Summer.
Biscuits - A full biscuit jar and knowing there is something to enjoy with a cup of tea at this time of year is a great place to be. Something simple like an Oatmeal Biscuits or ANZAC Biscuits are great for the biscuit jar, however buttery Shortbread is also a firm favourite of mine - and a lot easier to make in cooler weather (no chance of the butter being too soft!).
